mac and cheese deserves it's own post!

Tomorrow is my last day of school till June, hooray! Sadly with that comes the season finales of all our shows, what will I do with all this free time? (Atleast until Dexter season 3 comes out ;) Hopefully I can finish some of my endless amounts of scrapbooking and I bought a cheap prenatal yoga dvd today at Bookmans, the people on the front look like they are from the 80s, (good thing I have my own 80s outfit thanks to Melanie's 80s party! ;) hopefully it's not too bad.

So I made homemade macaroni and cheese tonight, it was delicious (dom approved as well), easy and super cheesy! It made so much, I can't wait to eat it for lunch tomorrow!
3 Cheese Macaroni with tomatoes
- 1 lb. box of rigatoni
- 8 oz Colby-jack cheese, cubed
- 8 oz cheddar cheese, cubed
- 8 oz Monterey-jack cheese, cubed
- 2 (14 oz) cans diced tomatoes w/garlic and olive oil, undrained
- 1 cup dry bread crumbs (which I didn't have, oops)

1. Preheat oven to 350 F. Lightly grease large baking dish.
2. Bring large pot of salted water to a boil. Cook rigatoni 10 mins.
3. In large baking dish mix cooked rigatoni, cubed cheeses and tomatoes with juice. Sprinkle bread crumbs on top.
4. Bake 30 mins. until bubbly and light brown.

  1. You forgot to mention how we are eating mac&cheese like every other day. It is definitely a craving. Not to mention that while we are eating it, your like 'oh this is soooo good, yum yum yum' haha
